The Gin Rickey is a highball drink which is known to be zingy, bright and strong.  It dates back to 1900’s and is made from gin, syrup and soda water dropped in the glass and served with a lime wedge.  Try to tweak the balance between the syrup and the lime to manage the sweetness and sourness.

Ingredients

• 60 ml gin
• 1 tbsp lime juice, freshly squeezed
• 1 tbsp homemade Simple Syrup
• Soda Water to top up
• Lime wedge to garnish

Method

1. Pour the gin into a highball glass filled with ice cubes.
2. Add lime juice and syrup and stir well.
3. Top up with soda water.
4. Serve garnished with a lime wedge and a straw.

Food Pairing: Spicy pork or fish tacos.
